Creamy Mayo Veggie Pasta Salad

Ingredients:
  • 8oz or 200 gms pasta (penne, rotini, or your favorite)
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup diced red bell pepper
  • 1/2 cup shredded carrots
  • 1/4 cup chopped red onion
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup sliced black olives (optional)
  • 3/4 cup Jimmy's original mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
Instructions:
  1. Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.
  2. Prepare the Veggies: In a large mixing bowl, combine the cherry tomatoes, diced cucumber, diced red bell pepper, shredded carrots, chopped red onion, shredded cheddar cheese, and sliced black olives. Mix well.
  3. Make the Dressing: In a small bowl, whisk together the Jimmy's original mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and pepper until smooth and well combined.
  4. Assemble the Salad: Add the cooled pasta to the bowl of veggies. Pour the dressing over the pasta and veggies. Gently toss everything together until evenly coated with the dressing.
  5. Chill and Serve: Cover the bowl and refrigerate the pasta salad for at least 1 hour to allow the flavors to meld together.
  6. Before serving, give the salad a final toss. Garnish with fresh parsley if desired. Serve chilled and enjoy
