Nori Seaweed Mayo Veggie Sushi Bowls

Ingredients:
  • 2 cups sushi rice, cooked and cooled
  • 1/4 cup Jimmy's nori seaweed mayo
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • Assorted veggies (cucumber, avocado, carrot, bell pepper, etc.),
  • Thinly sliced or diced 4 sheets nori seaweed, cut into thin strips
  • Sesame seeds, for garnish
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving
Instructions:
  1. Prepare the Rice: In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Add the rice vinegar mixture to the cooked sushi rice and mix until well combined. Let it cool to room temperature.
  2. Assemble the Sushi Bowls: Divide the cooled sushi rice among serving bowls. Drizzle Jimmy's nori seaweed mayo over the rice in each bowl. Arrange the assorted veggies on top of the rice in each bowl. Sprinkle nori seaweed strips and sesame seeds over the veggies.
  3. Serve: Serve the sushi bowls with soy sauce, pickled ginger, and wasabi on the side.
